You can pair it with hearty dishes such as roasted or grilled meats, stews, and strong cheeses like pecorino, or lighter and easy dishes like pasta or pizza. One classic pairing is with a traditional pasta with tomato sauce or get a little heartier and pair it with a ragu or bolognese sauce. The tannins in the wine complement the meaty flavours of the sauce and the richness of the pasta while the acidity makes it the perfect match for the tomato sauce.
